These are family run operations.
2kg puffed rice
200 gm suffer
500 grams of maltose syrup
2 ladles of coconut juice
1-2 teaspoon of condensed milk
Optional to add roasted peanuts and ginger
Puff the rice in hot sand. Mix the sugar, malt coconut juice and condensed milk and cook about 15 minutes. Add the rice and mix about 10 minutes. Put on a flat surface roll flat. Cut into squares.
We had an opportunity then to try some of the more esoteric items.
Below: This is snake whiskey. The basic ingredient is Vietnamese moonshine. Snakes are added with much the same effect as the worm in the tequila. That is to say, not much really except the excitement factor.
There were some prepared to try it, others more prepared to photograph it.
